Some of the best omelette pans have a rounded bottom for making the flipping or rolling eggs step easier. 8, 10, and 12 inch pans are the most used sizes. Non-stick pans are always recommended for ease of use and less clean up time. For cooking two-egg omelettes choose a 7 inch pan, for three egg ones use a 8 inch.

Look for hollow metal handles when purchasing omelette pans, as they stay cool longer and cool down faster. Another option is "Phenolic" handles which stay cool even when frying for a long time.
